Bibingka with coconut and lime
This recipe comes from Woldy Kusina, a great Filipino-American chef whose pancit recipe I shared last year. Bibingka is a cake made with rice flour, no wheat flour, so it happens to be gluten-free. It makes for a denser cake that’s a bit chewy like mochi, which is a texture I prefer over regular cake.
