This is a nice creamy pasta that’s more grown-up than mac & cheese but satisfies in the same way. I’ve never really been happy with replacements for cheese in vegan dishes, so this uses lemons and capers as strong flavors that work well with the creaminess but don’t pretend to be something they’re not.
