Eggplant with eggs
Couldn’t help it. I made plant-egg with chicken-egg. The eggplant is charred over open flame, the way you begin baba ganoush, so it becomes smoky and soft, and scrambles surprisingly well with the egg. The sesame oil adds another slightly smoky element. Best over rice, but good on its own as well.
