A fried cake with an egg resting on top of it and leaking its yolk over it.

This is another riff on a class recipe. I loved the pan-fried millet croquettes we made while learning about grains, but thought they could conjure up crab cakes or salmon cakes with the addition of sea vegetables. I served them with soft-boiled eggs for brunch today.

Serves 3-4
