Spicy Pickled Beets (v)
This is just one part of the Gregory Gourdet recipe I made. The full dish involved mixing yogurt with chopped mint, cilantro, lime zest, and lime juice, and serving that along with the beets over top of some roasted (or grilled) carrots.
