A Spanish tortilla is a great dish to make ahead of time and eat slice by slice over the next few days. It’s equally good as a breakfast, brunch or dinner, which is nice since with my current work schedule, my dinner is Anthony’s lunch, my breakfast is his late-night snack, etc.
