It's a good question! Mostly I justify it by comparing nuts to the cost of local free-range eggs + dairy, which can be pretty expensive. But I'm also experimenting with new ingredients — the sunflower flour I mentioned comes from a nearby farm and seems to work as a cheaper replacement for almond flour. And sunflower seeds in general are cheaper than nuts, so I'm working with them a lot (though I can't find any grown near me or even the US — an upcoming newsletter will be about my Great Sunflower Hunt).

Tree crops in general are something I've begun learning about and want to elevate as an industry/ingredient, so for home recipes when people can afford it I like the idea of presenting this use for them.

Ah, I love a chart like this, thank you!! I find oil seeds especially (pumpkin, sesame, watermelon seeds if you can find them, prob sunflower?) do so many of the same things eggs do as well. Love em.
